I got this from a pastry chef I used to work with, and I honestly haven’t tasted a better one, so I always kept it. Flour is obviously a crucial ingredient when making a recipe like this. I like to use unbleached products, but for a gluten free product you can always use bobs red mill 1:1 gluten free flour.


Cinnamon is absolutely necessary for this recipe. I also like to add a touch of clove, but that is optional. Another spice that really complements this sweetbread is freshly ground nutmeg.  


Traditional banana bread uses eggs as a binder. To replicate this, I like to use a lightly whipped aquafaba. This adds moisture to the cake and helps with the vegan banana breads tendency to become dry and brittle.

We are on our way to making the best vegan banana bread recipe! It’s an amazingly simple process, and if you have baked before then you will understand this process right off the bat.

First, we start off by gathering our ingredients. Its important to measure your ingredients very well to ensure you get the right result. You can go ahead and mix the dry ingredients together in a mixing bowl and set aside.

This recipe starts off with aquafaba. For those who don’t know, aquafaba is the cooking liquid for chickpeas. Using a hand mixer, we will beat the aquafaba until foamy. The we will set this aside for now.

Next, in a separate bowl, well will take a bit of oil and organic sugar and will well. After mixed, we will add that to the whipped aquafaba and beat together. We can follow by adding the remaining wet ingredients (vegan buttermilk and vanilla extract).

Now, for the ripe bananas. Its important to fold these in last, after a little mashing so they don’t get beat into a smooth puree. You want them to have a bit of texture, so they translate into the cake. The bananas need to be mushy.

Finally, take the bowl of dry ingredients and add it to the wet mixture. At this point, incorporate the batter using a rubber spatula, because you don’t want to over mix.

To do so, you simply place the unpeeled bananas on a baking tray and bake them off at 275 F. This will take roughly 15-20 minutes depending on how ripe your bananas already are.  

Can I substitute the aquafaba with something else?

For this best vegan banana bread recipe, I strongly recommend using the aquafaba because it really helps the cake from drying out! If you are set on changing this ingredient, then I’m fairly sure 2-3 flax eggs will do the trick!

Measuring Ingredients

Measuring ingredients is so important when baking. Follow the recipe to the teaspoon. If you don’t, then your bread will turn out incorrect and you time will be wasted.

Sift Dry Ingredients

These types of sweet bread loaves tend to become dense very easily. Take every precaution you can to prevent that by sifting your dry ingredients to create a lighter product.


Using brown sugar is the way to go! Brown sugar fits perfectly in this recipe by increasing the flavor and helping the moisture content. If brown sugar isn’t your cup of tea, date sugar is a particularly good and healthier alternative.

Type of Fat

The type of fat used in this vegan banana bread recipe is everything.  In my experience I have found that the best banana breads are made with oils rather than vegan butter. Vegan butter tends to make the end result dry and crumbly.

Just because fat is important, doesn’t mean you have to be unhealthy with it. Use whatever oil you are comfortable with. I like using vegetable, but coconut oil, sunflower seed oil, and any other oil will probably work.


Be careful not to over mix the batter! The easiest way to do this, is once you add the dry ingredients to the wet ingredients switch to using a rubber spatula to incorporate. Stop stirring when the flour is just stirred in. This is also why you should sift the dry ingredients.


Over baking is every baker’s worst enemy. You want to make sure you keep an eye on your vegan banana bread recipe towards the end of the cook time. You want to pull the bread out at just the right time. The bread should be cracked on top.

Fold some additions into the batter before baking, or just throw them right on top! Walnuts are a good addition. You can also fold in fresh banana chunks or banana chips. One of my favorites is chocolate chunks, chocolate and bananas are great together!


Store the best vegan banana bread recipe as a loaf. Its best when cut to order. Once it comes out of the oven let cool in the pan for 5 minutes then take it out and let, I cool at room temperature.

 Once cool, wrap it well with plastic wrap. I like using plastic wrap because it drastically reduces the amount of air surrounding it. If you store it in an airtight container, try to find the smallest option you have.  Store in the fridge for up to 5 days and in the freezer for up to 2 months!

Prep Time: 15 Minutes

Cook Time:  45 minutes


2             Cups      AP Flour

½            tsp          Sea Salt, fine

1             tsp          Baking Soda

1             tsp          Cinnamon

½            tsp          Nutmeg, fresh ground

6             Tbsp       Aquafaba

3             Med.     Overripe Bananas, mashed

6             Tbsp       Vegan Buttermilk

1/3         Cup        Vegetable Oil

¾            Cup        Brown Sugar

1 ½         tsp          Vanilla Extract

For decoration

1 Banana, sliced (optional)


  1. Preheat the oven to 350F. While the oven is preheating, line the 9×5 baking pan with parchment paper and spray with pan spray. Its ok if the parchment paper is hanging over the sides a bit.
  2. Sift the dry ingredients (ap Flour, sea salt, baking soda, Cinnamon, Nutmeg) into a mixing bowl, then set aside.
  3. In another mixing bowl, whip the aquafaba for 1-2 minutes until it is foamed up over the top. Then add the mashed banana to the whipped aquafaba and mix until evenly dispersed.
  4. In a third mixing bowl, whisk the brown sugar with the vegetable oil and whisk until combined. Then take this mixture and add it to the aquafaba banana mixture. Finish combining the wet ingredients by adding the vegan buttermilk and vanilla extract and mixing well.
  5. Take the sifted dry ingredients and dump into the wet ingredients. Using a rubber spatula, mix until just combined. Be careful not to over mix.
  6. Once the batter is just combined, pour into the lined baking pan. Tap the pan on the counter to remove any air bubbles and smooth out the top the rubber spatula if necessary.
  7. This is the time to decorate the top of the cake if you want. If you use a sliced banana, be sure to dust the cut side of the banana with sugar so it doesn’t turn black or brown during the cooking process. Also, you will need to smooth out the top once more if you add any toppings.
  8. Bake in the oven for 45- 50 minutes or until the cake passes the toothpick test.
  9. Once cooked, let the best vegan banana bread recipe cool down in the pan for at least 5 minutes. Then take out of the pan and let it cool another 20 minutes until slicing.
