Vegan Chicken Broth Recipe

Ingredients
  

  • 2 Medium Large Yellow Onions diced
  • 3 Large Celery Stalks diced
  • 2 Medium Carrots peeled and diced
  • 2 ea Leeks washed and sliced
  • 3 ea Garlic Cloves smashed
  • 1/2 Cup Nutritional Yeast
  • 1 TBSP White Miso
  • 8 Sprigs Thyme
  • 8 Sprigs Parsley
  • 1 Tbsp Black Peppercorns
  • 2 Tbsp Apple cider Vinegar
  • 2 Tbsp Chicken Bouillon Powder
  • 3 Qts Ice Water

Instructions
 

  • In a large stock pot over medium heat, combine all ingredients except for the turmeric, thyme, and parsley. Then slowly bring up to a low simmer.
  • Once at a low simmer, adjust the heat to maintain this rate of cooking. Simmer this mixture for 45 minutes, then throw in the remaining ingredients (thyme and parsley). Simmer an additional 15 minutes.
  • After the stock has cooked the entire time, take off the heat. Strain the liquid through a fine mesh strainer and discard the solids. Let the vegan chicken bouillon sit out at room temperature for 30 minutes before transferring to cold storage.
