Combine water and quinoa in a sauce pot over medium high heat, and bring this mixture to a boil
Once at a boil, reduce the heat to medium to medium low and simmer. Continue to simmer for 10 to 15 minutes, or until quinoa is cooked thoroughly.
While the quinoa is cooking, heat a sauté pan over medium high heat. Once pan is hot, add vegetables (onion, garlic, corn, and black beans) to the pan and caramelize. This should take 3-5 minutes. Don’t stir the vegetables.
Once vegetables are caramelized, transfer into a mixing bowl.
Next transfer the cooked quinoa into the mixing bowl with the rest of the ingredients (cumin, cayenne, oregano, salt, and spinach). Use the heat to wilt the spinach and make sure to toss thoroughly to mix.
Cool down the black bean and quinoa burger mix on a sheet tray. Spread it flat so it won’t take long.
Once cool, portion and shape your quinoa veggie burgers. Do so by scooping the mix with a portion scoop or by using a kitchen scale. Once all the burger mix is portioned, shape the patties at least and inch thick so they don’t fall apart on you.
Once the patties are formed, you can either store them in the fridge or you can bake them in the oven at 350F for 15-20 minutes.
Once the vegan quinoa black bean burgers come out of the oven, they are done and ready to eat!
